Honey Bee Cookies
1/2 cup of margarine or butter, softened 1/2 cup of packed brown sugar 1/2 cup of honey 1 egg 1 1/2 cups of all-purpose flour 1/2 tsp. of baking soda 1/2 tsp. of salt 1/2 tsp. of ground cinnamon Heat oven to 375 degrees. Beat margarine, brown sugar, honey and egg in a medium bowl on medium speed, scraping bowl constantly, until smooth. Stir in remaining ingredients. Drop the dough by teaspoonfuls onto an ungreased cookie sheet. Bake until set and light brown around edges (surfaces of the cookies will appear shiny), 7 to 9 minutes, or until golden brown. Mix 2 Tbsp. sugar and 1/2 teaspoon cinnamon; sprinkle on cookies immediately after removing from oven. Let stand 3 to 5 minutes before removing from cookie sheet, then remove from cookie sheet with metal spatula onto a wire rack. Makes 36 cookies.
Peanut Honey Spread 3/4 cup peanut butter 1/2 cup honey 1 tsp. ground cinnamon
Combine ingredients and mix thoroughly. Spread on English muffins, biscuits, or sandwiches.
Honey Mustard Dip 1/2 cup honey 1/2 cup prepared spicy brown mustard (or Dijon mustard)
In a small bowl, combine the honey and mustard. Serve with chicken or vegetables. Makes 1 cup
Honey Baked Chicken 1/4 cup honey 2 tbsp. balsamic vinegar 1 1/2 cups dried bread crumbs 1 tbsp. olive oil 6 boneless, skinless chicken breast halves, about 2 lbs. In a shallow bowl, whisk together honey and vinegar. Pour bread crumbs into a separate bowl. Set both bowls aside. Spread the oil over the bottom of a foil-lined baking pan large enough to hold all chicken pieces in one layer. Roll the chicken pieces in the honey and vinegar, and then roll them in bread crumbs, and place them in the pan. Bake at 375 degrees for 30 minutes, or until cooked through. Make 4 servings
Honey Fudge Pudding Cake
1 package chocolate cake mix 1 cup chopped pecans or walnuts, optional 1/2 cup butter 1/2 cup water 1 cup honey 6 to 8 ounces semisweet chocolate morsels
Heat oven to 350 degrees or temperature recommended on your specific cake mix. Grease 13x9x2 cake pan. Following the recipe on the box, mix the cake ingredients in a large mixing bowl and add the nuts. Pour into the cake pan. In a small saucepan, combine the butter, water, and honey and heat to boiling. Scatter the chocolate morsels (to taste) over the top of the cake mix, and then pour the honey mixture over all. Bake for 45 to 50 minutes (add about 5 minutes if setting the time by the box mix to accomodate the extra liquid). Test with a toothpick. Serve warm with vanilla ice cream. Makes 15-20 servings
